Amid the COVID-19 pandemic, mask-wearing has become a common practice in the foodservice industry to prevent the spread of respiratory diseases. Like kitchen utensils, a mask may serve as a vehicle for cross-contamination of pathogens during food handling. The objective of this study was to quantify cross-contamination between tasks of handling contaminated chicken and chopping lettuce. Chicken breasts were inoculated with a high or a low level of nonpathogenic Escherichia coli surrogates (ca. 6 or 4 log CFU/ml) and sliced for 1, 5, or 10 min. During slicing, duplicate, single-use medical masks were touched each minute. One mask was immediately sampled, but the second mask was used to contaminate lettuce by touching the mask each minute while chopping the lettuce for 5 min. E. coli were enumerated from the second mask and lettuce. Masks touched while slicing both high- and low-inoculated chicken showed significant contamination (0.8-4.9 log CFU/cm2) after each slicing scenario of 1, 5, or 10 min (P > 0.05). Lettuce was significantly contaminated regardless of inoculation level (1.0-3.2 log CFU/g). Slicing time was a significant factor in some cases (P < 0.05), whereas inoculation level was not (P > 0.05). Data indicate masks can be a source of cross-contamination if not replaced appropriately.

Procurement of game animals is a major source of revenue for hunting clubs in Poland. For several years, the game meat buying market has been showing an upward trend, but this situation is also influenced by random factors that negatively affect the value of the game meat buying market. For several years in our country we have been struggling with the ASF virus, and since 2020, negative effects in the economy related to the occurrence of the SARS-CoV virus have been observed, also affecting the hunting sector with its activities. The aim of the study was to analyze the dynamics of game meat procurement in Poland in the years 2009-2021. The data concerned the three most important species, namely deer, roe deer and wild boar. The analysis covered the quantity of game meat, procurement value and the average price of game meat depending on animal species. The conducted research confirmed an upward trend in the volume and value of game meat procurement for all the analysed game species. Similarly, the average procurement prices of roe dee and wild boar meat with the exception of red deer, showed an upward trend. The study confirmed the negative impact of the ASF virus and the SARS-CoV-2 virus on the game meat buying market in Poland.

Food safety has always been a major global challenge to human health and the effective detection of harmful substances in food can reduce the risk to human health. However, the food industry has been plagued by a lack of effective and sensitive safety monitoring methods due to the tension between the cost and effectiveness of monitoring. DNA-based hydrogels combine the advantages of biocompatibility, programmability, the molecular recognition of DNA molecules, and the hydrophilicity of hydrogels, making them a hotspot in the research field of new nanomaterials. The stimulus response property greatly broadens the function and application range of DNA hydrogel. In recent years, DNA hydrogels based on stimulus-responsive mechanisms have been widely applied in the field of biosensing for the detection of a variety of target substances, including various food contaminants. In this review, we describe the recent advances in the preparation of stimuli-responsive DNA hydrogels, highlighting the progress of its application in food safety detection. Finally, we also discuss the challenges and future application of stimulus-responsive DNA hydrogels.

Objective: The aim of this research is to determine the methods used by consumers from all regions of the country to evaluate the COVID-19 factor SARSCoV-2 virus in terms of food safety and to protect against it. Materials and Methods: The data obtained as a result of the research were evaluated using the mean, probability value (p value), percentage values and squared (X2) importance test with the Minitab program. Results 74.35% of the 1006 people know that SARSCoV-2 Virus is the virus that causes COVID-19.41.25% think that the SARS-CoV-2 virus that causes COVID-19 is transmitted through food.65.90% of consumers think that SARS-CoV-2 virus will be protected by following all general hygiene rules and 53.67% by opting for packaged food that is not sold in the open. Conclusion: Based on the results of the survey, it was thought that the COVID-19 virus could be transmitted through food, but the accuracy of this information could not be definitively proven.

Awareness of COVID-19 infection, as a public crisis, makes an emergency condition for survivors. Regarding the importance of early rehabilitation, we should pay particular attention to the potential risk of real-life toxicants in COVID-19 survivors. The adverse effects underlying COVID-19 infection lead to persistent sequelae in survivors. In addition, complete rehabilitation is challenging in seriously-ill patients due to cytokine storm severity, inflammation, oxidative stress, and cell death contributing to multi-organ damage. Different foods, environmental/occupational pollutants, and unhealthy lifestyles are real-life examples of toxicants that can pose redox imbalance and oxidative damage to the biological system. The key concept is that survived patients with persistent tissue damage, low-grade inflammation, oxidative stress, and fibrosis are susceptible to real-life toxic stressors, which have the potential for oxidative stress. Moreover, fibrosis are susceptible to toxic stressors, which can induce harmful effects by promoting oxidative stress and pro-inflammatory components. This paper attempted to elucidate a vital toxicological concept in which the existing sequelae of COVID-19 survivors increase the potential risk of real-life toxicants and to propose a practical strategic approach to reduce toxicant exposure.

To analyze the epidemiological characteristics and related factors of norovirus in Guangxi from 2015 to 2020, and to provide scientific recommendations for norovirus prevention and control. Methods The foodborne diseases surveillance data were collected from 11 sentinel hospitals through the National Foodborne Disease Monitoring and Reporting System from 2015 to 2020. R software with version 4.0.3 was used for descriptive and statistical analysis, including epidemic curve, chi-square test, and trend chi-square and so on. Logistic regression was used to analyze norovirus-related factors, OR values and 95% confidence intervals were calculated respectively with the statistical test level of P < 0.05. Results There were 1 008 norovirus cases detected, with a detection rate of 12.75% (1 008/7 903). Children with age less than 5 years (OR=1.43, 95%CI: 1.13-1.82) and patients at age 20-45 (OR=1.45, 95%CI: 1.13-1.87) were high risk population. The detection rate was higher in autumn (OR=1.29, 95%CI: 1.08-1.53) but lower in summer (OR=0.67, 95%CI: 0.55-0.80). In addition, the tourist area (Guilin City) presented a higher detection rate than other areas (OR=1.41, 95%CI: 1.10-1.80). Aquatic products (OR=1.40, 95%CI: 1.03-1.91), meat and dairy products (OR=1.31, 95%CI: 1.06-1.61) were high-risk foods for norovirus infection. The prevention and control policies of COVID-19 can reduce the possibility of norovirus by 61% (OR=0.39, 95%CI: 0.31-0.49) showed a declining trend (Trend X2=85.33, P < 0.001). In addition, prolonged visit time can lead to 19%-23% decrease in the detection rate of norovirus (OR24-48 hours=0.81, 95%CI: 0.70-0.95;OR>48 hours=0.77, 95%CI: 0.63-0.93). Conclusions The epidemic of norovirus presented seasonal and regional distribution in Guangxi with a declining detection rate trend in diarrhea patients during recent 6 years. Young children were high-risk population in infection norovirus. The intake of seafood can increase the risk of norovirus infection. The prevention and control policies of COVID-19 can sharply decrease the possibility of infection norovirus. The monitoring of key foods such as seafood should be strengthened, and the early screening of suspected cases should be taken. The norovirus monitoring should be improved to ensure the health of the population.

Foods and pharmaceuticals play key roles in public health and welfare and ensuring that these products meet their quality assurance standards is a top priority in health and medical care. Quality assurance of natural products is essential in pharmaceutical sciences because the outset of a medicine is a natural, crude drug. Regulatory science underpins scientific regulations and is closely related to the quality assurance of foods and pharmaceuticals to ensure their safety and efficacy. During my time at the National Institute of Health Sciences, Japan, from 1986 to present, the regulatory science of natural products has been my main research focus. This review discusses 24 studies related to the regulatory science of natural food additives, 26 related to foods, 23 related to borderline products, 16 related to illicit psychotropic mushrooms, plants, and agents, and 57 related to herbal medicines. In later sections, the regulatory science for ethical Kampo products with new dosage forms and herbal medicines that use Kampo extracts as active pharmaceutical ingredients are discussed. My experience from the early twenty-first century in research projects on the bioequivalence of Kampo products and the development of ephedrine alkaloid-free Ephedra Herb extract demonstrate that regulatory science is crucial for developing new drugs.

Since the 1990s, food safety has caused widespread concern from all walks of life. According to the theory of bibliometrics and scientific knowledge map and knowledge mining method, this paper quantitatively analyzed and visualized 3024 food safety papers and 31032 references in the core collection of Web of Science (WoS) to explore their research status, topic evolution and development trend. The number of academic papers in the field of international food safety increased by 11 times during the past 31 years;the knowledge structure of this field consists of foodborne pathogenic bacteria, food safety cognition, public health and food safety management;its research topics showed an evolution from consumer behavior and food-borne diseases to food safety risk management, food safety governance, food traceability system, food testing, to food global value chain, heavy metal excess, pesticide residues, food safety culture, to blockchain technology, Corona virus disease 2019 (COVID-19) epidemic, food fraud;food safety knowledge and willingness to pay premium, food contamination, aquatic seafood safety, vegetable safety, blockchain, COVID-19 represent the frontier trends, so as to provide references for academic research and government supervision in this field.

The relationship between international trade and animal health is particularly important in the Agreement on the Application of Sanitary and Phytosanitary Measures (SPS) of the World Trade Organization - WTO. Supported by the World Organization for Animal Health (OIE), SPS measures are scientifically justified and play an important role in placing epidemiology at the center of decisions related to health and animal trade. The objective of this study was to discuss the interactions between the international meat trade and the epidemiology of zoonotic diseases of viral origin, in a debate on how the current Covid-19 pandemic could change the consumer behavior related to health and hygiene issues, and how the meat sector was affected by SPS measures, highlighting the relevance of Brazil in this context.

Many pandemic diseases have emerged in the history and millions of people affected from these diseases. Among the marked pandemics in history, the plague, known as the black death, was recorded to cause the death of 17-54% of the world population. Similar to previous pandemics, as the SARS CoV-2, which emerged in 2019 and belonged to the coronavirus family, caused an epidemic and turned into a pandemic infection, positive cases were detected in more than 483 million people, and more than 6.1 million people died. While this emerging epidemic is still continuing its effects, it has been determined that there are positive cases in pets such as dogs and cats, especially in mink (Neovison vison). Especially in Denmark, Netherlands and Finland, positive animals for COVID-19 were accepted. Unlike the pandemic until today, the COVID-19 has spread to broader geographies and affected many animal species. With the reports that the SARS-CoV-2 - was first transmitted from bats to humans, this viral agent has been accepted as zoonotic, but a complete transmission route has not been shown for its transmission from other animals to humans except bats. It is reported that there is no significant risk of transmission of the virus, which is transmitted primarily by the respiratory route, from both pets and edible foods to humans. Although there are many reports in terrestrial animals, studies on the presence of SARS-CoV-2 - in aquatic animals or aquatic environments and COVID-19 transmission in aquatic animals have doubts. Here we reviewed the viability of the SARS-CoV-2 - in the aquatic environment, transmission to the aquatic ecosystem and aquatic animals, and therefore the risks to humans through water or aquatic products.

Since July 2020, nucleic acids of novel coronavirus SARS-CoV-2 were frequently detected in cold chain food imported to China, making imported food being a potential risk to the COVID-19 outbreak. Based on the epidemiological characteristics of SARS-CoV-2, imported cold-chain food and their packaging may become the carriers of SARS-CoV-2 in long-distance cross-border transportation. In each aspect of stakeholders including governmental supervision, manufacturers and consumers, China should strengthen the risk management of imported cold-chain food to ensure the safety, especially pay attention to the health protection of industry workers in close contact with cold -chain food.

The severe acute respiratory syndrome coronavirus-2 (SARS-CoV-2) is the causative agent for the coronavirus disease 2019 (COVID-19) pandemic. COVID-19 is contagious and fatal to humans. In the context of the COVID-19 pandemic, significant concerns on food safety and security are rising due to potential interspecies transmission. As such, surveillance of SARS-CoV-2 on imported meat and animal parts is carried out and reported in this study to safeguard food safety and security. Overall, none of the 225 samples from various livestock (buffaloes, cattle, goat and pig) imported from seven countries were tested positive for SARS-CoV-2 with quantitative reverse transcription polymerase chain reaction (RT-qPCR) from July 2020 to November 2021. This study finding serves as a baseline data for SARS-CoV-2 in imported meat and animal parts. Notably, this study accentuated the importance of active surveillance to prevent zoonosis and to safeguard food safety and security.
